So this morning I woke up to find my poor Ruben bear was ill. He is not feeling very well but we are going to monitor him for a few days before we take him to the vets. I won't go into too much detail about what the illness is (gross).
After sorting him out, I needed to think what to make for breakfast that would keep me a bit fuller than usual. I decided to make this delicious frittata that has all the ingredients of a good Sunday fry up in it but it is so tasty, healthy and good if you need to feed friends/family. It's also a really good breakfast idea if you want to teach others how to cook something a bit more complicated than cereal.
Fact: Frittatas originate from Italy as opposed to the Spanish Omelette. It roughly translates to an open faced omelette but you won't find it on many menus in Italy.
Fry up Frittata (Serves 4)
1 x onion (Peeled and diced)
1 x pepper (chopped)
4 x sausages
4 x slices of bacon (fat removed)
300g potatoes (chopped into cubes)
frylight or any low fat calorie spray
Vine tomatoes (chopped in halves)
8 x eggs (add oregano and salt and pepper and whisk)
Salt and Pepper
1. In a pan, boil your potatoes in boiling water for 10 minutes
3. Meanwhile, brown sausages and bacon in a frying pan. Also cook your onions and peppers for 2-3 minutes. When finished browning, cut sausages and bacon into chunks
I cook mine all in one large pan but it depends on the size of your frying pan
4. Spray a casserole dish with frylight and add potatoes, veg mix, sausages and bacon and mix together. Pour the egg over the top making sure it is evenly spread.
5. Place tomatoes on top
6. Cook in oven for 30 minutes
I enjoy this with baked beans to give it that proper fry up feeling. However other options could be to serve with halloumi or avocado. Tweet me @amikatie if you make this yourselves.
